This year I am starting to see the true value of the plants around me.

Oh man, what you can do with maple. Check some of my timeline from March thru June and you will see making syrup, ideas for syrup, and yes, this year I got zapped for some syrup orders.

Do you tap big leaf maple?

I'm all sugar and black maple here. I think you can, it just doesn't have as much sugar in sap, you would just boil longer. I made some syrup from walnut trees for fun and it was 80 gal sap for 1 gal syrup and it was great. Sugar maple is about 45 gal sap per gallon. So big leaf maybe closer to the walnut amount. I tapped 50 walnut trees to get that because they don't give as much sap either.

When I planted mine, I forgot it tends to be allelopathic.

Plenty of chop and drop mass just in the seasonal leaves though. 🀝

My plan was to just cover the cardboard I'm putting down in my beds with the leaves. Haven't really figured out our yet.

I've been trying to outrun winter on some other things and haven't finished the garden.
