Stainless steel frying pans are a shitcoin compared to cast iron.
Whoever has trouble maintaining a cast iron is doing it wrong.
Gentle: ceramic pans.
Nonstick frying: cast iron/carbon steel.
Fond/sauce making: clad steel.
