have you tried Castelvetrano olives? plump roundish green olives with a nutty flavor. 😋
wholefoods deli has nice ones—not too salty. costco had some pretty good organic ones once. not easy to find high quality tasty ones at most grocery stores tho.

Perhaps the particular length of curing and fermentation makes a difference. Some producers artificially darken green olives with controversial additives apparently, so sourcing matters.
Olive oil is fine.
