Lamb hocks are smelling & looking great.

They've been slowly smoking away for 5½ hours now.

I've now put them in a pan with some crushed tomatoes, onion, garlic & beef stock. The pan is a thick stainless steel & the liquid will keep the temp down.

This is a hands off cook.

Lamb is underrated

It's not something I'd want to eat every day, but I love it occasionally.

I've got a feeling goat is very similar but I've not done much with it.

You know that boers are meat goats, right?

We've tried goat a couple times. In my opinion, it's too-small-a-payoff for something that tastes the same as lamb, is less tender and more fiddly.

There's a reason goat meat belongs in curries.

Besides, goats are too friendly and hilarious to kill.
