Lamb hocks are smelling & looking great.
They've been slowly smoking away for 5½ hours now.
I've now put them in a pan with some crushed tomatoes, onion, garlic & beef stock. The pan is a thick stainless steel & the liquid will keep the temp down.
This is a hands off cook.
Do you know Dutch Oven? That could be something for you.

Maybe, I'm careful with something like that. They don't like it if we Germans build kind of gas chambers.
It's a sure fire way to cancel sexy time.
