How do I search my notes and go all the way back to the very first one? I'm finding most clients will only allow me to go back ~30 days or so

Some of your notes may be gone forever, or they may be on an "archival" relay forever. Archival relay would be one that is dedicated to keeping all data in order to run a sort of wayback machine type of service.
Storing data is expensive and running a relay doesn't make money (except for paid relays).
The best way to **guarantee** that you have all of your historical notes would be to run your own relay.
Maybe someone else will give you a more practical answer, I feel like the way back machine for nostr exists, I just don't know of it.
