Assume it did, though - assume every single citizen dumped all their fiat for BTC. now clearly "the state" isn't going to be doing any defense, since it'll be broke (barring some small btc reserves).

"The State" ceases to be an ideological target of enemies because it ceases to exist. Smaller collections of individuals are less likely to be targets of massive external states because they don't pose large threats to them; but even if they are, sovereign, well-resourced collections of anarchocapitalist innovators can defend their smaller footprints quite handily.
