This! And you also want it to have a good chew. Nicely cooked outside from the boiling step of bagel making, and fluffy gluten goodness on the inside.

haha, yeah, you boil bagels, if you do them properly

the romanians do really nice ones tied up in knots... when i was homeless in bucharest the day i discovered them was quite a nice day... tasty and full of energy and chewy and yum and chewy

Yeah! Boil for a minute or so on each side, then bake. That’s how you get the chewy outside! 🀀
