I mean Nostr is not the agent that can sell anything, but even nostr:npub1sx9rnd03vs34lp39fvfv5krwlnxpl90f3dzuk8y3cuwutk2gdhdqjz6g8m type of thing is harvestable data, so I guess anybody could build a crawler that extracts data from public relays?

No disrespect, but you're confused. Nobody claims Nostr somehow invented public data that's also private. If you publicly publish something it's public. Anyone can use/propagate that information.
Nostr's benefits are that you solely have control over what you publish and your data isn't going to be use by an algo _that you're forced to use_
legally, it's up to the individual whose work is being plagiarized to tackle that.
if it's being used at a school or work then it's up to the workplace or the workplace or school to enforce (fired, expelled, etc.)
copyright on written work is very difficult to enforce.
