Whatever default comes with graohene. It sucks, it has very obvious bugs!
Ie if I type some words and then delete rheblast letter ofntheblast word, it will delete the space BEFORE the word whose last letter I've deleted

Try out florisboard. Feels almost like the iOS keyboard to me and comes with spacebar cursor functionality.

I hate to admit it but iOS beats the fuck out of android for UX
When I say android I mean Graphene on a Pixel7 which I love but the UX the touch the tiny details donβt compare to the forbidden, rotten to the core Apple
The difference would be that you can make the UX exactly how you want it on an android phone and you're reserved to a very limited number of options for UX on iOS.

Just use Google's Keyboard (GBoard), revoke network permissions. Works perfectly

It's the default AOSP keyboard. It hasn't been updated in a long time by Google, because of GBoard and other OEMS developing their own keyboards, like Samsung. For the most part, Google just releases security updates for the AOSP apps. All of Graphene's apps (with the exception of auditor, pdf viewer, apps, and the camera) are the default AOSP ones that don't really get maintained by Google, except for the regular security patches.
Florisboard is the keyboard that the Graphene team was debating to replace the AOSP keyboard with eventually, I assume after it gets past an Alpha state. It's the closest you'll get to Gboard or iOS level from the open source options. You could always use Graphene's extended toggles to revoke sensor or network permissions from invasive things like Gboard as well

I don't know if you can. Gboard is Google Keyboard. It may need Google Services and may not work on Graphene.
Google essentially abandoned AOSP keyboard and put all of the cool stuff into Gboard. Google has done this with many, many core AOSP apps. Calendar, Messenger, Contscts, etc.
I use Gboard on graphene and it works perfectly. Only keyboard I can tolerate and I've used a bunch.
The way I have it configured on my phone, Google services is installed but it has zero network permissions. Same with Gboard. Nothing Google on my phone is allowed to network at all.
