Over nostr would be way better. Maybe nostr could handle the escrow agent bit, too, just using trusted connections. No fancy smart contracts needed, just keep track of who held the "escrow" via events and make clear whether or not they fulfilled their duties. If not, their credibility will forever be besmirched.

I'd actually use that.
