I do that too but I don't heat the kimchi. Tasty & easy

Korean places do this with the dolsot bibimbap and it's hella good. That's how I got the idea to just throw it in while I finished up the beef. Not as good as a dolsot bibimbap, but pretty cheap and quick and easy to cook.

That's where I got the idea too. 😅 this place I went to had a bibimbap omelet and it inspired my quick & dirty version
