American "bread" (in Europe Australia etc. it's legally considered cake.
It would be something they're adding to it that makes it bounce back, probably has high fructose corn syrup and a bunch of binding agents and whatever else
More like what’s in the food we are buying and choosing to eat! Make your own if you don’t like it take responsibility for what you stick in your mouth!
