Been trialing Made In clad cookware after using All Clad forever.

In many ways I prefer Made In. In a couple months I'll make a determination.

my issue with all clad is in the ergonomics, the handle is oddly flat and difficult to wield

- handles too short

- pans too shallow

- unnecessarily heavy

- chrome finish is hard to upkeep

- too costly for what they are

They're induction compatible.

Oh, well I'm asking because Ray sometimes mentioned that not all stainless steel is the same, there are different grades and the kind that happens to be magnetic has less issues with leaching metals into acidic food

Nearly all 304 stainless has a nickel leaching problem.

403 is less durable, less popular.

No free lunch.

There are 100% ceramic cookware that I need to evaluate, but I've heard they perform terribly and aren't practical.

Yes and they seemed to have nailed it. Performs way better than All Clad's or any other I've used.
