Plain I sear then set on a low rack in roaster, cover roaster with foil and toss in oven. Can go low and slow or norm temp and time but low and slow gets it to fall apart better.
Marinades work well and I have been loving a maple bourbon one for grilling that is super easy to make. Maple syrup, bourbon, soy sauce, salt, pepper, onion and garlic powder. I gallon ziplock the cut and pour marinade in, remove excess air and let it sit for hours, sometimes overnight.
