I used to know someone into Ayurveda who was helping me, but I fell off and that was before I was dealing with the inflammation. I like all those foods so anything helps 🫂

You can implement it slowly over time. Then there is not worry of falling off.
Start with one small change (to diet or lifestyle) a week... Or month.
Eating mung dal soup for dinner once a week is very soothing.... And healing (just don't add garlic).
I would start there. I have tons of non-indian recipes in my book and on my website. Stuff that will give you variety and help you feel satisfied.
