A work in progress, this chefs knife has been a real challenge for me because it needs precision grinding, but its coming along great! Its forged from 1085 steel 1 inch round bar, and has an integral bolster, my favorite look! I'm so excited to complete it!

Any one have a wood preference between, poplar, hickory, ash, and red oak? still trying to decide on handle material, I'm leaning toward ash or hickory, ash has great contrast, and hickory has tight grains. All input is welcome!

I think a hickory handle would fit well with that blade.
