Does Starlink work with pay as you go, recharges or just a monthly sub? Thinking of having a backup internet connection but don’t want a monthly sub if I’m only using it as backup.

Monthly. I use it as my primary now. Far more reliable than existing cable service.
I guess you could get the hardware and then only run it the month you need the backup system
