Got it from local rancher

That cut can be hit or miss. But when it has a nice marbling and it’s dry-aged 👌🏼 rib-eyes are great, but sometimes you get big chunks of fat on the middle that I’m not a fan of

Fat = flavor

True but marbling is key. Not many enjoy a mouthful of fat
