I have a very simple tortilla recipe that I love. Can you share your sourdough tortilla recipe?

its accidental.

i make two small doughballs a week. one on Saturday, one on Wednesday. just flour, water, salt, and the natural sourdough starter weve had going for a few years now. i don’t refrigerate the dough, and just make progressively stronger little sourdough flatbreads with breakfast. they last for four days at room temp before the bacteria runs out of food. i just put the cast iron press inside a large cast iron pan, on the stove, and when it’s hot, brush a little oil on each side and press a little dough ball for 30 seconds.

Ok wow this is a new way of using starter that I've not heard of before. What are your ratios for the starter salt water and flour? I'll give it a go.

exactly! that is why my wife is the baker. she does exact much better

Ok so I made the dough today. I this I probably added a bit too much water as it's a fairly sticky dough. Looks a lot like low hydration bread mix at this stage. I did 2:1 flour to water and a blob of starter and a good wack of salt. I think I'll try to make it a bit of a stiffer dough next time but I'll cook this batch up from tomorrow and see how it goes.

that is the great thing about winging it. if its too wet, you can add a little more flour, or water and make crepes or pancakes πŸ™‚

Reporting back in. Best tortillas ever thank you for sharing! I'll make them a little stiffer now that I know what texture I'm aiming for.

This is so much simpler than what I was doing before and tastier too.

I'm going to try oven roasting to make tortilla chips too.

one thing i would say is i will

wait until day 2 to make the tortillas. when the dough is softer and full of bubbles.
