Last night, I did a test run of scotch duck eggs. I found a wheat free recipe that uses chicken flour instead of flour.

OMG why have I never made these before?

Basically, you hard boil the eggs, spice and mix your ground meat, coat the egg in the ground meat, dredge in chicken flour and bake.

the egg retained moisture which made the yoke not "dry" like in a normal hard boiled egg. the chicken flour crisped the outer part of the whole thing nicely. Baled at 350 for 15 mins, turned, then another 10.

WTF is chicken flour? Had to search that one out. Most interesting thing I learned today, maybe even this week.

I too was intrigued when I heard about it. it is dried, cooked chicken breast turned into a powder.

I plan to try to make some so I can figure out if freeze dried is better than dried.
