Have a look at your Hub > Settings > Developer > Experimental and generate a new token. You can then use the Hub APIs with that key. That being said: It's experimental, there are no docs and no promise of backwards-compatibility đŸ˜‰

I'd be happy to use NWC as your docs recommend but I don't see how I could create the sub-wallet (nwc string?) without using an API.
Yeah, you can't. NWC currently only covers payment-related actions (generating invoices, paying invoices, signing stuff, etc), but not vendor-specific things such as creating subwallets.
