It's a hard one. But as a sovereign individual you need to establish a set price for your skills.
The answer is quite simple: it's because of HUMANS. But let me explain a bit more. A lot of the time, people tend to be really selfish and mostly care about themselves. They don't really care about others because they believe their success is all because of their own hard work. They often don't realize that is mostly luck -their family, the country they live in, and even the time they were born play a big role. This way of thinking can lead to a world where people are only interested in what they want and don't want to help those who need it.
Even people who used to be poor and then became rich can start acting this way. Even though there are good-hearted people who care about others, it seems like a whole bunch of people are more focused on themselves than on helping others.

Because employees still choose to stay for less. If your landlord accepted a lower rent, you would choose to pay less like the employer does.
I feel like there is a larger issue, if you look at it that way, of government setting the minimum wage and for example the anti-union movement in the US. While inflation and living costs go up, wages have not increased at the same rate. But of course all influenced from the top down. Same with Anti-trust regulation, which is supposed to protect consumers and the free market, but big tech seems to skirt whenever it pleases them. Lobbyists win, common good loses out.
That's not the cause of inflation. Employers will always offer the lower salary the same way as if you were the employer, but it has nothing to do with inflation. Inflation is caused by an increase in the money supply.
