They always used bing. You're probably mixing it Startpage which does use Google's search engine.

Why is brave's engine better than bing? Better in terms of usefulness is subjective. If better privacy I would definitely like to hear the argument.

FYI if you use something like CalyxOS or Graphene, you can completely restrict network access to any app. So you can for instance use Gboard and just never let it hit the Internet.

I've almost completed that quest! Here's what I'm using:

Google > Kagi

Android > Calyx

App store > Fdroid and direct download of apks (just starting to try out Obtainium)

Email and calendar > Proton

Drive and Docs > combo of Markor and Syncthing for notes, and using Yunohost to host Cryptpad

Contacts > OpenContacts

Messanger > Beeper (a new addition, still testing), was using an sms app from fdroid

Authenticator > Aegis

Keyboard > Thumb-Key

Books > Voice for audiobooks

Only thing I have left to replace is the camera app, seems like nothing comes close, though I do use a different gallery app from fdroid.

A Synology NAS does a great job of replacing the core services. Theoretically even email, although I would recommend against using your own email server for obvious reasons.
