It depends on you.
You can order the cuts you want from many local butchers. They pack it and freeze it. You pick it up. Otherwise, you'll have to step way outside of my area if expertise when it comes to butchering.
When you buy a 1/2 or 1/4 of a beef, it is with the understanding that it will be processed into the cuts you want at a butcher shop. Picking it up as a whole piece is possible, but any butcher will ask appropriate questions to make sure you are not getting yourself into more work than you anticipate.
duh, I guess that makes sense now that I'm hearing it... I have a few local grass-fed beef sources - I'll just go talk to them and see what a deal would look like. Thanks!
