What are your thoughts on GrapheneOS? Can I use the normal app store or is there a GrapheneOS specific app store? Is it easy to back out if you want to go back to the default Android? Any other gotchas to be aware of?

Iām not too familiar but I think you have to use the F-Droid App Store with Graphene.
Probably not easy to go back and forth without wiping your device.
You can use the regular App Store if you're willing to install Google Play Services. Otherwise, you can use Aurora which has all the stuff from the Play Store on it, or F-Droid which is a repository of open-source apps.

Aurora Store is the alternative to the Play Store. You can download anything you want from the Play Store from there
