That's so cool!
Congratulations, I hope he's tender.
Did a mobile butcher come & do it or did he go off to the abs?
We put our first steer in the freezer today. One we bought and raise ourselves. This is a huge level up for us.
The next level up is when they are born on the farm and are processed on the farm. That is still about two years away for us with our first go of breeding happening at the end of Feb.

We had the mobile butcher come out. He was great and took the time to show us what he was doing every step of the way. Once we have our citadel energy system installed with nostr:nprofile1qqsfqvtvsc0kcnfjn7us0zy09y8jpstpz4xv5txdtgs35mmpwg6dx2qpz4mhxue69uhk2er9dchxummnw3ezumrpdejqzyrhwden5te0dehhxarj9emkjmn9qyv8wumn8ghj7un9d3shjtnwdaehgu3wvdhk6tnpw5lke56e we'll have our own cool room. Working through a whole steer is a huge task and our guy has a crane and lift system that we just can't do ourselves yet.
It's great that he took you through what he was doing. It's all valuable knowledge & experience!
