We put our first steer in the freezer today. One we bought and raise ourselves. This is a huge level up for us.

The next level up is when they are born on the farm and are processed on the farm. That is still about two years away for us with our first go of breeding happening at the end of Feb.

Not sure where y'all are located, but I'd suggest calving during your peak grass growing season. We just had an accidental calf during the middle of winter and got very lucky that it wasn't extremely cold out like last week. A dead calf would be a huge setback for small scale beef production.

Taking responsibility from "sperm to spork" is very rewarding but a very long term game--~39 months until you get beef. Potentially having to wait a few months to align for your optimal season will pay dividends for years to come.

My 2 sats about halfway through our beef flywheel spinning up.

Funnily winter is our grass growing season. Summer is dry dry dry here. We only had 6mm rain in Jan and the grass is crispy.ww are thinking that August - November might be our perfect calving time.

Did a mobile butcher come & do it or did he go off to the abs?

We had the mobile butcher come out. He was great and took the time to show us what he was doing every step of the way. Working through a whole steer is a huge task and our guy has a crane and lift system that we just can't do ourselves yet.

Why is processing on the farm 2 years away? Still need to learn to butcher too?

We had a butcher come in and do it for us today as we are still learning. It just takes 9 months of the cow being pregnant then 12 - 18 months to grow and finish. That why is 2 years off before the next level up. Probably could have been clearer in my first post.
