This is the only bar+restaurant in the valley that serves non-alcoholic kombucha on tap.

I'm toying with the idea of starting a Kombucha brewery. Since drinking Kombucha I have found I can handle drinking more alcohol without feeling sick, I think it's the B vitamins. I would love every bar and caffe to have a tap of Kombucha

Ooooh, I want one

My local brewery has kombucha. I'm not really a fan. It tastes too vinegary for me, though it seems decently popular.

This one was light and sweet. A bit sweeter than I like actually. I prefer the more vinegary kombucha.

The more you brew, the more vinegary it gets.

Kombucha can get vinegary instead of a more mellow tarty taste if the culture gets out of balance and is dominated by the yeast. It won't have as much glucuronic acid, which is one of the main beneficial acids.

My kambucha mother. Non-alchoholic. She’s a year and a half old. Her name? Scoby-One. #foodstr plus the bottles carbonating on their second ferment.
