When do you flip? To prevent the skin from sticking?

Ah it’s gonna stick if you didn’t grease the grill. Cooking fish in foil is easier

Foil sticks too unless you butter it or something

No foil on food in this household.

Aluminium only for hats.

Even with greased grill. Seems like if you early or too late, it will partly stick.

Trying to pin point the right moment, and read the right signs.

Ideally, you'd have a fish grilling basket that you just flip. Now that you've already started... Very carefully with a few spatulas.

Surely master grill doesn’t need a basket.

I don't see a grill basket (the kind that close, with handles) in your pics. There are large ones you can get. All around the world, when I've attended fish bakes on the beach, that's how it was done. Easy flips. That, or skewer the fish and almost rotisserie style cook.

Cedar plank grill salmon, don't flip.
