Maybe the best way to answer them is to start by describing the various types of relays between public, private, paid, whitelisted, etc?
Which will probably lead to questions of "which are the best public relays vs paid relays and which should I use?"
So maybe that's not the best way to answer them?
Are there any websites that do real-time rankings of relays for the various types?
I would recommend them to use client #[2], since the top 20 best relays on Nostr are already added by default.😎

Find a person you like, open theirs and copy. I'm using Plebstr on iPhone, it's pretty simplistic, and I have no bloody idea where to find and how to add paid relays or browse what is there. There will be a lot of clueless people like me.

That's a tough one. I started with Amethyst's defaults, added some paid ones and used noStrudel to see which ones often failed to accept my posts. Relay stats and ratings might help.
Thinking about creating a rebroadcaster to compile stats while increasing send reliability.

What are the tradeoffs between wine and eden?
The good thing of both relays are that they are maintained by experienced relay operators (good system administrator) Mazin and Semisol, so technical problem like server went down is unlikely to happen (reliable relays).
If i'm not mistaken, Wine has 4 regional mirror servers while Eden has 2 regional mirror servers. Wine has extra additional feature (optional extra cost) which is filter.nostr.wine . Eden offer monthly subscription while Wine offer one-time based subscription.
I think you can check on their website to compare and decide based on your needs 🙂
