do you think it'll be strong enough for a loaf by turkeyday? I feel like 3.5 weeks might be pushing it.

It might not be super flavorful, but it should be active enough to get a loaf. Once again, I'll shill the Sourdough School cookbook by Vanessa Kimbell. There were some great tips for getting some funk going on in your starter. 🪩

I've been working out of Flour Water Salt Yeast by Ken Forkish as my mainstay, as well as "The Perfect Loaf" online. The leftover starter sourdough waffles from that website have been a staple of mother's day the past few years.

Omg yes! And the banana nut bread 🤤. Someone recommended that book, but I completely forgot about it. I need to check it out.
