How to Smoke a Brisket:

After applying your rub of choice.

1. Smoke naked on the grill until 160-165.

2. Wrap and return to grill until 203-204.

3. Put it in a cooler with towels (no ice packs 😄) for at least 30 mins.

4. Cut up and serve.

You set the temperature of your grill depending on how quickly you want it done.
