So why doesn’t it happen in a jug?

It does, but a jug pours from the top and there isn't a big enough opening to skim the fat without reintro it into the milk.

The industrial store jug milk imitation product is homogenized meaning that the cream does not separate.

Why would you want to get rid of the fat?

To make butter than can be consumed more moderately than milk.

We plan to make raw butter and preserve in our space freezer.

After a couple days, when the cream has risen and thoroughly separated from the milk (thanks gravity), use a ladle to scoop out it and make butter.

We use a Kitchen Aid stand mixer and it's fairly effortless. 2 gallons of raw Jersey produces about 2-3 sticks of butter and a big jar of butter milk, which the wife will use in breakfast foods.
