ok this sounds like maybe the best version of a ham and cheese pancake with some apples?
-farm raised ham is a+ in my book, night and day from store bought
-buckwheat I don't know much about but crepe seems fitting
-hard swiss cheese
-tart apples

If you like Indian food you will probably like it. Similar but different.
The pancake you see all the stews on is injera. Itβs a stretchy spongy tangy pancake that is sourdough made from teff flour, not wheat. It sounds weird but is really good.
lots of stews and ferments. lots of natural processes, and clay ovens. and ethiopia is known for its spices, going back thousands of years.
all served on top of a natural rise sourdough pancake. itβs dreamy stuff.
The best coffees I have ever had are also at Ethiopian restaurants. The only coffees I have ever enjoyed black.
