Part 2 of the question is can either of you recommend a grill to buy? Does it matter what you get? I have a BBQ but Google tells me that's very different from grilling.

So I went the opposite route and have been getting propane heated grills. I love the consistency and efficiency and don’t always have the time charcoal requires.

I am using a Weber 2 burner right now at home and at my job site I have a NexGrill. The NexGrill is shitty but I put a cast iron flat top on it and it cooks very well. The issue there is the grease makes a huge mess in the bbq and it drips out of the lid and onto the ground.

I have to stay the cast iron flat top works the absolute best though (even though the grill is shitty). Browns the meats perfectly and is seasoned to a point where anything that touches it is greatly enhanced. People have seriously been telling the meat I cook on the grill is the best or among the best they’ve ever had.

I’m thinking of getting a purpose made flat top style propane fueled grill. I think since it’s engineered for the flat top it’ll be less messy, but maybe I’m just being hopeful.

I hear you on time. Gas easier for sure. My 2 cents. Never heard anyone complain about Weber. I have a bull cart but got it on sale as no-one in Costa Rica wants charcoal and was a steal. They're not cheap. I'd personally go for something with a bit of width as makes offset heat a lot easier to manage.
