Crab (lions mane) cakes
This sounds perfect. Fried up one as a test and it does taste like crab or lobster. Absolutely delicious.

these cakes might make the weekend menu as my mouth is watering.
It's funny looking at mushroom recipes/vids because most seem to be vegan. Mushrooms are the closest thing to meat that they have.
I'm still waiting for my lionsmane blocks to colonise fully before putting them in fruiting conditions.
It seems the texture & flavor of lionsmane is very close to crab meat. Pull apart the mushroom into pieces, dry fry to evaporate moisture, then add butter & garlic to finish.
They very much have a light seafood flavor and texture of crab.
So cool you are going to grow them!
I couldn't find them fresh & I've been a little mycelium obsessed the last 4 months. The effects on the brain are what intrigue me about lionsmane. They're a trippy looking mushroom for sure though.

I always struggled to sauté them well, but they can be good. Just takes being present and patient to carmelize them evenly.
You can make a nice dual extraction tincture. I tend to use them that way, medicinally, rather than as food.
Such a wonderful versatile mushroom.
