Medium rare for me. If I want rare, I’ll go with beef tartare.

Correct. I’m just saying I don’t go rare but medium rare or I’ll do raw instead. Rare steak isn’t that great imo.

There are only a couple of places I have eaten tartare and in both restaurants it is their specialty - what they’re known for. I also know where their beef comes from.

It’s definitely not something I’d eat every day.

Mid rare is ok too, but tartare is just a totally different thing imo. Have you ever tried reverse searing?

Oh I have tried reverse seared steak. I think it’s one of few ways to make a perfectly cooked one. Also best for thick cuts.
