You just spend from your postmix utxo. These are not connected to your history/person after a coinjoin.

No, a merchant cannot prevent you from paying him in a coinjoin.
You simply put the address of the merchant with the amount of sats of the payment to the outside of the coinjoin transaction.
Currently only wabisabi and joinmarket supports this.
Use Mutiny or Zeus to set up a LN channel from a non-kyc/coinjoined UTXO, then use this Lightning channel to spend.
