why the air gap..?
Health code. If the drain line backs up, the air gap prevents the dirty water from backing up into the sink where food is prepared. It spills out onto the floor instead, preventing contamination.

now that i think about it the few commercial kitchens i've been in had the sinks drain into a floor drain.
