IMHO use "degoogled" Android, there are predesigned and/or preinstalled mobiles on the market.

degoogled phones are mostly great. the only downside is if your banking app needs to run a certified OS or if you need to use google wallet for NFC mobile payments. sadly you need a CTS certified devices for that.

On the other hand I don't use even banking apps. Intentionally. This is an another kind of dependency. So if ylu use them, you can forget the word "privacy".

good point about webapps. sometimes they suck, but it's better than zero access. i still have many fiat based bills to pay and will be dependent on banks for the foreseeable future.

That’s the one thing that makes me hesitant with graphene. I have an insulin pump that is run by my phone. Would not be able to use if I switched to that OS. Could still use the pump independently but would be much more of a hassle.

The Graphene is a bit risky. If you have never changed the stock ROM to custom, I can advise that start with LineageOS. If you want to use Google "things" then you should install GFS too (a pico or nano version will be enough I think). For details see the lineageos website. But if you are brave you can use LineageOS for MicroG (separate website). MicroG is a "rewritten"/google services pack, it uses spoofed ID-s. And you don't need gmail account.
