It is useful for privacy. You can also run your own mint.

"Cashu is a free and open-source Chaumian ecash system built for Bitcoin. Cashu offers near-perfect privacy for users of custodial Bitcoin applications. Nobody needs to knows who you are, how much funds you have, and with whom you transact with."

I still don’t understand how it works.

Me neither, really. Cryptography is a pretty opaque topic.

At a basic layer the mint receives sats via lightning, then it can transfer them between users who connect wallets to that mint, which can then be sent out to a lightning wallet. That's pretty simple.

How the privacy preserving part works I'm not so sure.
