Put it head-first upside-down into a cone, then cut the head off.

They make cones specifically for this.

we put our poultry upside down in a widened cone, head sticking out. They are calm and constrained. Use a sharp knife across the neck and it will bleed out hanging there. Basically. I'm sure there's a YT tutorial for visual help. Also ask your local farmer where you can find poultry meat to buy; most I know are very friendly and some are even willing to teach in person. Many ways to do the job. An axe to the neck will suffice. The deaths throes will be intense so either let me go and flop around or fully restrain him in a cone or similar

We always used the broom handle approach. Hold the rooster/chicken upside down by the feet. The broom handle goes across their neck (usually held with foot/feet. A quick yank, breaks their neck. If you yank too hard, the whole head comes off (plus or minus depending on your perspective), then hang to bleed out.
