humans can eat sugars so they can build up a fat layer. It's a fallback mechanism for when real food is hard to find.

Has there been any studies on eating sugar before a work out and how that may improve or decrease function, mental resilience, etc during high physical intensity?

Probably loads. Performance means different things to different people. To some it means winning a medal in sport. To others it means being able to play with their great grandkids when they're 95.
