I use a Meater probe. They’re expensive but you get the perfect internal temperature every time with real time information to your phone via Bluetooth.

Lol, the long rib bones left attached to the chop, it can be done with pork chops as well. The bones can be garnished and used to create a nice dish presentation when serving.
