You can somewhat opt out of auto surveillance by avoiding cars with:

-android auto

-apple carplay

-starlink

-cameras

-satellite radio

-onstar/similar

Generally, this means older year vehicles.

In the US all vehicles after 2015 (i think) are required to have telematics tracking systems. You cannot opt-out of it. People with dealer access (I do) can often look at everything you do with a car, especially location, location history, nearby devices etc. These systems cannot be removed. Don't purchase new vehicles if you really care about this stuff. I just needed your VIN number to gain access to these tracking systems.

If I give you my VIN can you track it?

If you have a Ford, Chrysler, or GM in the US. Some models require the user to authorize via their app if it's enabled.

Horrifying

Covered this topic in a podcast a few months ago too!
