Please explain why these transactions are less valid that some utxo consolidations, or continuous transactions between exchanges to arbitrage the different prices.

Fees are still pennies. All the JPEGooors are too broke to pay to store their fat payloads in a block.
Not sure how it could easily be undone now and there is probably a reason the witness data is cheaper, but its a bit of a piss take that these are filling up block space with discounted fees.
