I'd be surprised if each one had its own node instead of using Block's gateway node.

Agree. I think interest in running a lightning node increased due to Square's announcement that they will use lightning.

Low fees

There was a ton of small lightning nodes turned on that apparently we're supporting taproot assets in some way. I'm not sure what's going on there.
