If you are not self-hosting the simplelogin stack than you have to trust them just like with every email provider. It’s a downside of e-mail as a protocol, that it is not easy to self host and the provider gets your plain text mails.
If you can trust simplelogin than you gain a lot of advantages because you never have to give out your real email address.
If a burner address gets leaked you can simply disable it and know which site leaked it because you use a different address for every site.
Also you cannot be tracked across sites by your email address as a unique identifier.

You could also self host their server stack as it is open source. Just need a cheap vps and you are good.

For some reason they provide a segwit and taproot address separately and prefer taproot payments instead of providing an on-chain and a lightning address.

For me simplex fills an important gap because I don’t want to hand out my phone number to everyone so that they can contact me on signal.
With simplex you can start messaging without sharing anything about your identity.
Also you don’t have to trust Signal not to collect metadata.

Just checked out Nunchuk Wallet and it seems really promising! Lot's of great features for advanced use cases and it's designed for multisig management.
BlueWallet is also an option for using with your hardware wallets but Nunchuk beats them in features.
