I tossed two left over chicken thighs into the pot covered with bone broth, adding some seasoning, (salt, pepper, chili powder, garlic, onion) and pitched in a single serving cup of mashed avocado (I buy these at Costco and keep them in the freezer until I need them). Then about a quarter tsp of Calabrian chilies in oil. (channeling Bobby Flay)
Cooked while I did the podcast. Then went out to the garden and grabbed a handful of green beans, about 6 cherry tomatoes, a bit of swiss chard and arugula, some fennel fronds, a couple mouse melons (just to see what they taste like cooked = not bad) & White Chinese celery. Tossed in and let it go while I edited.
To finish when I put it in the bowl I topped it with some lacto fermented kraut, a dice of jalapeno (from my garden), comfrey flowers and some parmesan cheese.
Nothing about this was hard, it is full on keto, all left overs and what was at hand. No idea what I was gonna make when I went out to see what I had to work with. So much flavor contrast it is just awesome. Big fat boost from the avocado. Broke my fast with it at 3:30, had not eaten since 7PM the day prior.
